A phoenix, technically. He can turn into one, or just change partially, and he can't get killed, since he heals instantly. It's pretty cool. [ calling devil fruits evil makes him laugh again, also. ] Yeah. Devil Fruits. It's 'cause eating them is making a deal with the devil, so they say. Every fruit gives a different power--only way to know is if you've done a lot of research into what the one you'd want looks like. You get whatever power the fruit gives you... but in exchange, you can no longer swim. The sea hates you and it takes away all your strength.
